I adore avocado...chopped in a salad, sliced on a sandwich, mashed into guacamole or even just scooped out of the skin on its own. I love to eat the creamy, almost buttery, yumminess called an avocado.
My favorite way, by far, however is to toss the avocado with chunks of garden tomatoes (yes, homegrown...there is nothing like a homegrown tomato, of which they are bountiful come summertime in Illinois) thinly sliced red onion, olive oil, a bit of vinegar, salt and pepper, a little bit of lime juice and some toasted cumin. With a hunk of whole grain bread or just on its own, It is the freshest way to enjoy an avocado.
Avocados are packed full of nutrients and rich in healthy fats. Each serving, about one fifth of an avocado, contains nearly 20 vitamins, minerals and phytonutrients (which is a fancy way of saying nutrients derived from plants).
